Break 1 egg into a cup and slide it into the vortex. Poach until the white is firm and the yolk thickens slightly but is still runny, about 3 minutes. Using a slotted spoon, lift the egg out of the poaching liquid and drain it briefly in the spoon on paper towels before serving. Repeat with the remaining eggs. MAKES 4 SOFT-BOILED EGGS 4 large eggs
